Date Change

After looking at the calendar and what will be happening in the next month, I will now start my challenge on the 15th. After all, I have all that Valentine's chocolate to consider! Okay, not really, but it will work better with our snowboarding trip in March and it gives me a few more days to get things in order. This is not something that I plan to impose on the family. Elijah will still have his cheese sticks and oatmeal, and Jeff his protein bars, but when I cook dinner, it will be what I am eating for everyone. If they want to add to it, that will be fine.

Dairy is going to be the hard one to replace. I, as the doctor who took care of my broken arm reminded me, am at that age where I need to supplement calcium. I know I can get it in a pill, but there are also plenty of other non dairy sources. Most of which I like. (I'll get a list together and post it later.) Of course, I like food and that's what got me to this point in the first place.

So, time to put the groceries away. By-the-way, Sunflower Markets had great looking portobello mushrooms today. They make great replacements for burger buns!

  1. Wow! Craziness! Can't wait to read about it and perhaps I'll be inspired to do it over here in Tennessee as well! Whoa...pretty cool...never heard of, or thought to think of, mushroom caps as burger buns!!! Pretty nifty! love your blog by the way, even if I don't always comment!

  2. Thanks, Anna. I saw the mushroom thing on Rachel Ray I think. Just drizzle with oil and season like you want then grill or broil them. I do it more like an open face sandwich because they do get a little too juicy. I'll try to post a pic later. (love your blog too!)

  3. Hey Melissa...I just thought of something...you can make your own calcium. Take eggs...put them in a jar, squeeze lemon juice over them to cover them. Put lid on, put in fridge. Lightly shake them about 3 times a day, and in 3 days, remove the eggs (they'll be jelly like, but still useable!) and then what you have left over is calcium...best thing is that it's the best kind that can be absorbed by the body. So, I figured since you can have eggs on paleo, it's paleo friendly! :-) Take a tsp a day and that should be plenty for you!!!

  4. I would guess that might work. I have heard of just taking your egg shells and grinding them in a spice mill or food processor then you could add it to smoothies orwhat ever. You would just want to get it really fine I would think. I might just try, they usually just go into the compost bin or to the chickens.

  5. Yes, you can use the egg shells and just grind them! And, I think a coffee grinder would work best as it would get it more fine I believe. But, then of course, you'd have to clean your coffee grinder :-)
